Ingredients
- 1 head of cauliflower
- 2 teaspoons of curry powder
- 1 teaspoon of turmeric
- 1/4-1/2 teaspoon of chipotle powder
- 2 teaspoons of red curry paste
- Himalayan salt
- 1/4 cup light coconut milk

Total time: 1 hour
Prep time: 5 minutes
Serving size: 1 cup
Servings: 2/3- my head of cauliflower was rather small
21 day fix: 1 green , 1/2 blue
- Break cauliflower into florets
- place on baking sheet and spray with coconut oil
- place in oven to roast at 400 degrees
- Let roast in oven until the cauliflower is brown on the outside ( about 30-40 minutes)
- Once the cauliflower is brown, place in a skillet with the remaining ingredients. Cook until it begins to simmer about 8 minutes.
*NOTE- When I make this I estimate out my seasonings. Feel free to add more or less of the seasonings. The chipotle powder is very spicy and a little goes a long way. If you don't like spicy you can alway omit the chipotle powder.
